Mishka Osman – A simple and easy recipe for any occasion. I like to make all the components of the recipe myself whilst others like to purchase the ice cream ready made.
INGREDIENTS
· 4 balls vanilla ice cream
· 2 Free-range egg whites
· 120 g caster sugar
· 1 Madeira cake
COOKING INSTRUCTIONS
Freeze 4 balls of vanilla ice cream overnight. Preheat the oven to 200°C. Beat the egg whites until stiff. Gradually beat in the caster sugar. Cut the Madeira cake in half horizontally, then cut out 4 rounds using a large cookie cutter.
Place a scoop of ice cream on top of each round of cake. Cover with the meringue and bake for 3–5 minutes or until the meringue is golden. Serve immediately.
