2 kg leg mutton
Cut meat into 2 finger wide and thick strips. Boil washed meat in salted water ( ½ cup coarse salt into 2 ltr of water) till done.
Roast cumin and dhunia seeds on a tava (thick pan) crush them and mix with a little turmeric, chille and pepper.
Rub the mixture well into meat strips. String them on a line and hang in cool place till well dried out.
Cover with net or muslin to keep off flies
