Calzones, subs and wraps recipes (28.01.16)

Calzone 

4 cups flour
1 tsp salt
1tab mix herbs
125gr butter
1pkt yeast
3 tblsp sugar

Add all the above ingredients in a dish
½ cup milk. ½ cup boiling water, 1 egg, small tin nestle cream mix these 4 ingredients together and add to flour mixture to form soft dough
Leave to rise
Once risen punch down and form into small balls and rollout like a saucer size

FILLING
Sauté 1 onion in ghee add 4 cups chicken fillet cubed
Add salt black pepper green masala after 5 min add 2 tomatoes grated, 2 carrots grated, 1 cubed green pepper and 1 punnet mushroom
Then take 1/4 cup milk and 1tblsp maziena and make a paste and add to chicken
Mix well remove from stove add green dhana
When mixture is cold put 1 tab of filling in the centre of each calzone
Add cheese and close like half moon Brush tops with egg and sprinkle with poppy seeds
Bake at 180 till nice and golden brown

SUBS

Cut chicken in strips and cook with:
1 tblsp nandos sauce
1 tblsp tomato sauce
1 tbspl mayonnaise
1 tsp red chilies
1 tbspl olive oil
1 tblsp lemon juice
1 tsp garlic salt
1 tsp lemon pepper
Dry parsley
Ghee
Mix everything and cook. Cut rolls in the center, fill with filling, top with kachumar and cheese and grill in the oven till cheese melts…


WRAPS

1 cup flour
1 tsp baking .powder
1 tsp ghee
1/4 tsp salt
1/2 tsp kalunji
Make dough with sour milk and grill on tawa with butter.

Filling.
Marinate chicken fillet with mochachos spice and 1 egg, dip in southern fry coating and fry, and fill with chips, chicken, salad and sauce.
