10 large carrots
2 level Tbsp slat
3 green peppers
5 Tbsp corn flour maizena
3 Tbsp achaar masala or powdered red chillis
5 Tbsp sugar
4 cups vinegar
3 Tbsp mayonnaise
2 tsp sesame seeds
2 tsp mustard seeds
1 cup oil
Method:
Sprinkle salt over carrots and marinate overnight.Next day, dry out in sunlight or in a dry cloth for 2-3 hours. Add the sliced pepper.In a pot combine corn flour, masala, sugar and a little vinegar to form a paste then add remaining vinegar.Stir over medium heat until thick pour over carrots and green pepper. Stir well. Add the mayonnaise and mix.Place sesame and mustard seeds over carrots, heat oil until very hot then pour over seeds. Toss well. Bottle and refrigerate.
