1.5kg green Mangoes 3 TBSP Methi Masala
2 TBSP Salt 1.5 Cups Sugar
4 TBSP Chillies 2 Cups Vinegar
2 TBSP Whole Jeera 0.5 Cup Maizena/Corn Flour
1 TBSP Crushed Dhania
1.5 Cups Oil 2 TBSP Mustard Seeds
8 Green Chillies slit 2 bunches curry leaves
10 Cloves Garlic
Peel, wash and drain green mangoes dry. Cut to desired shapes and sizes. You could grate as well. Sprinkle first five ingredients over.
Boil sugar, maizena and vinegar – stir continuously and when it thickens pour over bowl of mangoes.
Fry vagaar ingredients in oil and pour over green mangoes. Mix well and bottle once cooled.
