12 slices bread
Unsalted butter
Shredded lettuce leaves
Cubed cucumber
500g cubed cooked chicken (or leftovers)
Add enough mayonnaise to give a moist texture
METHOD:
Butter bread slices on one side. Place filling on 6 slices. Cover with buttered side on top and on the bottom. Cut each into half. Toast the sandwiches. SERVE HOT.
