Ingredients:
750ml (3 cups) Cake flour
250ml (1 cup) coconut
312ml (1¼ cups) yellow sugar
15ml (1 Tbsp) fine ginger
5ml (1 tsp) baking powder
125g butter
1 egg
2.5ml (½ tsp) bicarbonate soda
20ml (1 heaped Tbsp) golden syrup
62.5ml (¼ cup) oil
250g melting/cooking chocolate
Method:
Mix the flour, coconut, sugar, ginger, bicarb and baking powder together.
Rub butter into dry ingredient mixture to form a crumbly texture.
Beat egg and oil and add golden syrup.
Add dry ingredients mixture to the egg-oil mixture and mix to form dough.
Roll dough and scrape its surface with a fork to create a rough texture.
Cut dough with oval cookie cutter, and place into baking tray.
Use finger or knife to press indentation into center of each cookie.
Bake at 180C for 10-15 minutes or until done.
Once baked and cooled, sandwich biscuits together with melted chocolate.
