3 cups cake flour
1 cup coconut
1 ¼ cups yellow sugar
1 Tbsp fine ginger
1 tsp baking powder
125g butter
1 egg
½ tsp bicarbonate soda
1 heaped Tbsp golden syrup
¼ cup oil
250g baking chocolate
Method:
Mix the flour, coconut, sugar, ginger, bicarb, and baking powder together. Rub butter into dry ingredient mixture to form a crumbly texture. Beat egg and oil and add golden syrup. Add dry ingredient mixture to the egg- oil mixture and mix to form dough. Roll dough and scrape its surface with a fork to create a rough texture. Cut dough with oval cookie cutter, and place into baking tray. Use finger or knife to press indentation into center of each cookie. Bake at 180C for 10 – 15 min or until done. Once baked and cooled, sandwich biscuits together with melted chocolate.
