Ingredients 
1/4 cup oil
1/4 cup ghee
1 tsp cumin seeds 
2 bay leaves 
1kg leg mutton cut in pieces 
1 level tsp tumeric 
2 tsp kashmiri chillie powder 
2 tsp rustenburg chillie powder 
1 tsp crushed chillie 
2 tsp cumin and coriander powder 
1 tsp garum masala 
1 tsp tandoori spice 
1 tsp barbecue spice
1 tsp steak and chops spice
1 tsp lemon pepper
1 tsp salt
1 heaped tblsp ginger and garlic paste
1 tblsp vinegar 
1/4 cup tomatoe sauce
1/4 cup yoghurt 
2 tblsp tomato paste or puree
Method 
Marinate mutton with the dry spices,ginger and garlic paste, tomatoe sauce, yoghurt, vinegar and tomatoe paste for a few hours.
Heat oil and ghee. 
Add cumin seeds and bay leaves. 
Allow to sizzle. 
Add mutton. 
Braise on high heat for 5 minutes. 
Add 1 cup boiling water and cook on medium heat for 1 hour. 
When all the water has dried out add 1/2 cup fresh cream and 1 tsp kasoori methi. 
Simmer for 10 minutes.
Garnish with dhunia and chillies. 
Serve with puris.
