INGREDIENTS
125g BUTTER OR MARGERINE
250ml SUGAR (200g)
2 EXTRA LARGE EGGS
500ml SNOWFLAKE CAKE FLOUR (280g)
2ml SALT
5ml BICARBONATE OF SODA
5ml BAKING POWDER
100g RED CHERRIES, QUARTERED
125g PITTED DATES, CHOPPED
200ml NATURAL /PLAIN YOGHURT OR SOUR MILK.
SYRUP
200ml ORANGE JUICE
5ml GRATED ORANGE RIND
200ml SUGAR 150g
METHOD
CREAM BUTTER AND SUGAR TOGETHER. BEAT EGGS INTO MIXTURE ONE AT A TIME UNTIL LIGHT AND CREAMY. SIFT FLOUR, SALT, BAKING POWDER AND BICARBONATE OF SODA AND ADD TO EGG MIXTURE. ADD FRUIT. ADD THE YOGHURT, MIX WELL AND PLACE INTO A GREASED RING CAKE TIN OR LOAF TIN. BAKE IN A PRE-HEATED OVEN 180c FOR ABOUT 45 MINUTES.
FOR SYRUP:COOK ALL INGREDIENTS TOGETHER FOR 5 MINUTES AND POUR OVER
CAKE WHILE STILL HOT
