TOMATO BREDIE
Mutton
1 big Onion
Ginger Garlic
Chilli powder
Liquidized tomato
Potatoes
Tomato paste
Little sugar
Braise meat with chopped onion and ginger garlic
Add salt and chilli to taste
When almost done add tomato and potatoes
When potatoes are soft add tomato paste and sugar.
Serve with rice
MUTTON STEW 1
1kg mutton
1 large onion
1 cinnamon stick
Whole peppers and cloves
Jeero
Ghee
Make vagar with onion. Add in mutton and cook for 45 minutes till done.
Meanwhile cut up veggies. I used
Baby marrows
Carrots
Butternut
Onion
Tomato
Green beans
Cabbage
Potato
Once mutton is done, heat ghee in a big pot add mutton. Season with
Green masala
Lemon pepper
White pepper
Crushed garlic
Salt
Dhana jeero
Arad
Aromat.
Add veggies in order of which takes longer to cook. Once all veggies are on close pot and cook on low for 15 minutes.
Serve with pap or roti
GREEN BEAN BREDIE
1kg bony mutton pieces
½ kilo green beans
3 potatoes cut into quarters
3 carrots julienned or cut into rings
Wash meat and cook until tender add salt pepper crushed chillies to taste braise then add green beans and potato and cook till potato done
Serve with white rice and cucumber salad
MUTTON STEW 2
1 kg Mutton / chops
1 large tomato chopped
2 – 3 small baby cabbages finely shred -steep in boiling water
1 cup thinly sliced green beans -steep in boiling water
3-5 med carrots -cut into rings
1/2 cup green peas
Few baby onions
2 large onions cubed coarsely….
Make a vagaar with onions in oil n jeeru and few whole peppercorns
Add 1 cinnamon stick
Add 1 whole dry red chilli to vagaar….
Then add washed drained meat that was marinated in
1 heaped tsp red masala
Salt to taste
1/2 tsp arad
1Tsp dhana
1/2tsp fine jeeru
1 tsp red fine chillies
1 tsp coarse red chillies
Braise meat well in spices on low heat …when well braised then add all your veggies except carrot rings Add chopped tomato over Then add carrot rings n pickled onions and ½ cup green peas on top Cook on medium heat till veggies n meat is well done Can add a pinch saffron over stew n cook till done Serve with hot rotis n piccalilli on side
