1 ½ kg green mangoes
2 tblsp salt
4 tblsp red chillies
2 tblsp whole jeera
1 tblsp crushed dhania
3 tblsp methi masala
1 ½ cups sugar
2 cups vinegar
½ cup corn flour/maziena
VAGAAR
1 ½ cups oil..you can add less oil
6 green chilies slit
8 cloves garlic
2 tblsp mustard seeds
1 handful of curry leaves curry leaves
1.Peel , wash and drain mangoes dry. sprinkle first 2 ingredients over.
2. Boil sugar, maziena and vinegar.. stir continously and when it thickens pour over bowl of mangoes
3. Fry vagaar ingredients in oil and pour over mangoes.
4. Mix well and bottle once cooled.
5. This atchaar freezes very well
