Easy meals and drinks for summer time (22.01.15)



Fego chicken basket

1, 5 kg chicken fillet (cut in2 thin strips).
Marinate with garlic paste, 1tsp lemon pepper, salt, arad, dhana jeero.       
Cook till dry.

Sauce-2tblsp butter, 1cup sweet chillie sauce 1 tblsp sesame seeds. Boil and pour over above chicken just b4 serving.

Crumbed chicken

1, 5 kg chicken fillet (cut in2 thin strips) marinate with 1 tsp salt and 1 tsp fine red chillies.          
                            

Beat together 1small tin nestle cream and 1 egg, add to chicken strips.dip each strip in Kellogg’s breadcrumbs and fry in medium oil till golden.

Serve with chips and dipping sauce (2tblsp mayo, 2tblsp golden syrup pinch of salt).

Apple and passion teaser

1 cup passion fruit cordial
2 green apples peeled and de-seeded
1 lemon
Liquidize with 11/2 liter of water
Strain and sweeten with sugar.
Add a grated apple and serve chilled.
Bread cups
6 slices bread

Cup in round to fit into patty pan, toast in oven until crisp. This can be made ahead of time. Take 3 pieces chicken fillet ( finely cubed). Cook with ghee, salt, lemon pepper, green masala and lemon juice, once cooked leave to cool completely, to the chicken add cubed cucumber and mix with sour cream. Fill in bread cups before serving, garnish with parsley. Lovely for hot summer days.
