MINI KEBABS IN LEMON BUTTER SAUCE
2 cups chicken fillet
1 cup milk
1 tsp salt
3 slices bread
2 eggs
3 tblsp green masala
Dhana and spring onions
Magimix above ingredients, form into mini patties and fry in little oil. Melt 1/4 Ib butter and 1/4 cup lemon juice, add the kebabs and allow to steam for a little while, you can make mini burgers or serve just like that with chutney
FETA, ROCKET AND MUSHROOM BRUSHETTA
1 french loaf (cut into slices)
1 large clove garlic
Olive oil to drizzle
Make toast with french loaf, when done, rub garlic on and drizzle with olive oil.
Topping
1 tblsp olive oil
60gr butter
1 punnet mushrooms (cut in 4)
2 cloves garlic
Heat oil and butter in a pan, add mushrooms and cook, season with salt and pepper, when almost done add garlic.
Spread feta cheese on bread, add few rocket leaves, top with fried mushrooms and garnish with greens, serve immediately.
MARROW AND HALOUMI FRITTERS
1 punnet marrow
1 pkt haloumi
1/4 cup flour
2 eggs
1/4 cup oil
1 lemon (thinly sliced)
4 sprigs spring onions
1 tblsp fresh dill
1/2 cup thick yoghurt
Coarsely grate marrows, and squeeze out as much water as you can, mix marrow, spring onions, haloumi, flour, eggs and dill, season with salt and pepper, mix to form a batter. Heat oil and fry fritters, drain on paper towel, to serve, top fritter with yoghurt, lemon and small sprig dill.
MINI SWISS ROLL PIZZAS
INGREDIENTS FOR PIZZA DOUGH
4 cups cake flour
½ tsp salt
2 tsp sugar
1 packet instant dry yeast
125g butter
1 egg
1 cup milk, 1 cup water
METHOD
• Heat butter, water and milk
• Sift flour and add salt, sugar and yeast
• Add egg to the butter and milk mixture.
• Make soft dough with this mixture. You may add more water if necessary
• Leave dough to rise until double its volume.
• Roll dough into a large rectangle
• Spread chutney or sauces of choice and filling of choice – chicken or steak can be used
• Roll up like a Swiss roll and cut into slices approximately 2cm thick
• Stand up slices on a greased baking tray closely together.
• Leave to rise
• When slices have risen to twice its size sprinkle cheese, garnish with origanum and bake @180c
APPLE AND PASSION TEASER
1 cup passion fruit cordial
2 green apples peeled and de-seeded
1 lemon
liquidize with 11/2 liter of water
strain and sweeten with sugar.
add a grated apple and serve chilled
ICED COFFEE
2 litres milk
2 litres plain vanilla ice –cream
1 tin condense milk
1 tin nestle cream
7 tblsp nescafe coffee
liquidize everything together in a blender and serve chilled
