1 kg whole fillet, cleaned and trimmed
5ml salt
5ml black pepper
60ml oil for frying
Mushroom sauce:
30ml oil
1 med onion chopped
30ml crushed garlic pun net mushrooms sliced
250ml fresh cream
30ml flour, mixed with 100ml water
10ml salt
5ml black pepper
Cut fillet at 3cm intervals. Sprinkle fillet with salt and pepper. Heat oil in large saucepan and fry fillet until it is cooked through. Set aside.
Sauce:
Heat oil in a saucepan and sauté onion until soft and sauté onion until soft and golden. Add garlic and mushrooms sauté for 5 minutes.
Add cream, flour mixture, salt and pepper. Allow to cook until sauce thickens. Pour sauce over the cooked fillet.
