Fresh Vegetable Soup (31.05.08)

     

 

2 Tbsp oil

2 tsp garlic, crushed

1 cup chicken fillet, finely cubed

1 large tomato, grated

1 med potato cubed

1 large carrot diced

1 large onion, sliced

½ cup jungle oats

1 tsp chilli powder

1 tsp coriander & cumin powder

1 tsp salt ½ tsp white pepper

1 pkt lite cup a soup (summer veg)

2 Tbsp parsley, chopped

 

Heat oil, fry the garlic for 1 minute and then add the meat for 2 minutes and add all the veg and spices except for lite soup.

Add 2 liters of water and simmer until about 1 ¼ liter of broth remains

Remove from heat and leave to cool

Liquidize the mixture and bring to boil

Follow instructions on packet and add to soup.

Mix well and garnish with parsley

Add more salt if required.
