Ingredients
* 500 g full-fat Greek yogurt
* 4-5 tbsp honey (plus extra to drizzle)
* 100 g walnuts, roughly chopped
* 2 tbsp sugar (for caramelising)
* 1 tbsp butter (for caramelising)
* A pinch of salt
* Optional: ½ tsp vanilla extract
* Optional: loukoumades (small Greek doughnuts) or other fried/ready doughnuts for serving
Method
1. Caramelise the walnuts
* In a small pan, melt the butter over medium heat.
* Add the chopped walnuts and sugar; stir until the sugar melts and coats the walnuts, giving a glossy caramel finish.
* Add a pinch of salt while still warm.
* Spread on parchment and let cool/harden.
2. Freeze the yogurt
* Mix the Greek yogurt with 3–4 tbsp of honey (and vanilla extract if using).
* For best texture, use an ice-cream maker: churn according to manufacturer’s instructions (about 8-10 mins) until creamy.
* If you don’t have an ice-cream maker: transfer the yogurt mix to a freezer-safe container, freeze for ~4–6 hours, stirring every 45 minutes to break up ice crystals.
3. Assemble & serve
* Scoop the frozen yogurt into bowls.
* Drizzle extra honey over the top.
* Sprinkle over the caramelised walnuts.
* Add loukoumades (or small doughnuts) alongside or on top for the authentic twist.
* Serve immediately for the best texture.
