Gingerbread muffin 

1 cup strong black tea set aside
3 eggs
½ cup normal sugar
Beat till light n fluffy

Add in:
1 cup oil slowly while the egg mixture is still beating than add 1/2 cup golden syrup. Beat till it nicely combined.

Then add:
2 ½ cups flour
2 tblsp fine ginger
1 tsp fine cinnamon
1 tsp fine nutmeg
1 tsp bi-carbonate of soda
Take the black tea & add 1 tsp baking powder. Give a quick stir & pour over flour. Beat till nicely combined. Pour into prepared muffin or cupcake pans & bake at 180 for about 20 minutes. Once a bit cool drizzle over golden syrup and serve.
