Healthy Muffins (04.08.09)

 
375ml soft brown sugar
2 eggs
120g melted butter
625ml flour
150ml digestive bran
500ml milk
12ml bicarbonate of soda
2ml salt
5ml vanilla
200ml cake fruit mix or raisins or dates
100g pecanut (optional)
 
Pre heat oven to 180 degrees grease muffin tin. Beat together sugar and eggs. Add butter and beat well. Add remaining ingredients mix well. Place in a container with a lid in the refrigerator for at least 24 hours before cooking. Place in grated muffin tins and bake for 10 – 15 minutes or until done.
