Ingredients:
250g Meat (chicken or mutton)
3 small potatoes
1tsp ginger/garlic
3carrots (halved lengthwise)
3 wedges of cabbage
Handful of green beans (cut in 5cm pieces) you may use double beans whatever is available
Some peas
1 brinjal quarted
1 large sliced onion
A few whole peppers and cloves
1 piece tuj
2 elachi (cardamon)
¼ cup oil
1 tsp salt
½ tsp fine pepper
2 whole green or red / chillies
½ cup yoghurt
½ cup pureed or grated tomatoes
Method:
Cut meat into small cubes wash and drain
Wash and drain vegetables.
Put the meat and vegetables into a deep dish and add all the spices, yoghurt and tomatoes.
Fry the onions in oil till golden brown
Remove onions from oil and add to dish of meat and vegetables
Mix well and put back in pot of oil
Simmer slowly, gently stirring at intervals.
When stew is done garnish with parsley
