Italian cuisine recipe (11.09.14)



CALZONE RECIPE
4 cups Flour.
2 TBLSPN Butter.
2 TBLSPN Sugar.
1 tsp Salt.
1 pkt Yeast.
2 cups warm water

•    Put all the ingredients together in a bowl and make a soft dough.
•    When kneading dip hands in oil n knead well .
•    Leave to rest n rise and double in size .
•    Roll out small rounds or roll out big and cut with a  cutter .
•    Fill and fold over . Let it rise and bake

CALZONE FILLING..
Chop 1 onion finely n saute in butter or ghee .
Chop 1/4 red ,green ,yellow pepper .
Marinate Chicken fillet cubed for 1 hour in Red masala ,green masala , 1 TBLSPN Pepperdew Paste ,salt n chicken spice and lemon pepper .
Cook till done but not to dry.
Before filling add 2 TBLSPN Cross n Blackwell Chillie Sauce,
cheese n Chopped Pepperdew.

SPAGHETTI BOLOGNAISE
1/2 kg chicken Mince.
1 Onion Chopped.
5 TBLSPN ghee n oil.
1 tsp Whole jeero.
1 TBLSPN green masala.
1 tsp Salt.
½ tsp Lemon Pepper.
½ tsp Blk Pepper.
1 tsp origanium.
1 tsp Dry Parsley.
3 tomatoes liquidised.
3 TBLSPN tomato Puree.
½  Pkt spaghetti boiled.
Method:
make vagaar with onion , jeero ghee n oil , add mince with your spices and cook till done add tomatoes n tomato puree n herbs cook till nice n saucy . Then layer spaghetti,  mince , cheese  and serve.

FOCACIA – ITALIAN FLAT BREAD
15 ml dried yeast.
300 ml lukewarm water.
5 ml Honey.
500g white bread flour.
5 ml salt.
45 ml olive oil.
METHOD
Mix first 3 ingredients and set aside.
Mix other ingredients.
Then add yeast mixture.
And make Dough.
Roll out thick n bake at 200 for 30 mins

TIRAMISU DESSERT
1 x 250 gr mascarpone cheese.
1x 250 ml Fresh Cream.
1 Tin Condense Milk Large Tin.
1 Pkt Boudoir Biscuits.
1 cup Milk.
1 cup Boiling Water.
5 tsp Frisco instant coffee.
Sugar to sweeten.

  Method :
 Make coffee with boiling water and sweeten with sugar . Dip the Boudoir in this mixture . Whip the fresh cream separately . Then beat the mascarpone and condense milk till smooth .Add the beaten fresh cream to the cheese mixture and add in mixture . Put the biscuits mixture at the bottom of a Pyrex dish , and then pour the cheese n cream mixture on top. Dish ,and then pour the cheese n cream mixture on top . Dust with coffee and leave aside to set
