½ cup castor sugar
2 tblsp butter
1 egg
2 tbslp apricot jam
1 ½ cups flour
Pinch of salt
1 cup milk
1 tsp white vinegar
1 tsp bicarbonate of soda
SAUCE
½ cup butter
½ cup sugar
1 cup milk
½ cup Ultra Mel Custard
METHOD
•Cream castor sugar, butter and egg well.
•Add in the apricot jam and mix well.
•Then add in the flour, salt and milk.
•Mix the vinegar and bicarb together and add to above mixture and mix well.
•Pour into a greased oven proof dish and bake for 30 to 40 minutes on 180c.
•Melt the ingredients for the sauce and pour over the pudding as soon
as it comes out of the oven.
