5 ½ cups flour
3 ½ tsp cream of tartar
500gr butter
Grate the butter into the flour and mix lightly, make dough with.
2 egg yolks
± 2 cups ice water
Mix well
Leave the dough in the fridge for about an hour then roll out 3 times, leave to rest for half a day. this is now ready to use.
