Mexican rice
Boil 3 cups rice in salt water and drain,
Put it back in your pot and steam with 1 cup water.
Chicken:
2 cups chicken fillet
1 tblsp ghee
¼ cup lemon juice
1 tsp salt
1 tsp red chillies
3 tblsp tomato sauce
1 tblsp ginger garlic masala
1 tomato grated
2 tblsp yoghurt
Heat ghee in a pot over medium heat, in a dish combine fillet, lemon juice, salt, chillies, tomato sauce and masalas. Add to ghee and cook for a while when almost done add tomatoes and cook till completely cooked, allow to cool then add add yoghurt.
Cube 4 small potatoes
Deep fry in hot oil until crispy, season with red chillies.
1 tomato cubed
When serving, spoon rice on a platter, spoon chicken fillet on top of rice, put potato cubes and tomatoes on the edge, garnish with greens and serve with sourmilk.
Nachos
1 pkt Doritos (any flavour)
Arrange on a platter, mix 1 cup sour cream with 2 tbl mayonnaise, drizzle over doritos, covering most of it, make an onion tomato and cucumber kachoomar, put kachoomar on top of sour cream, cube 1 avacado and throw on top of kachoomar, top with grated cheese, before serving pop in hot oven for few min so cheese melts.
Guacamole
1 ripe avacado
1 tomato (finely chopped)
4 tblsp lemon juice
2 tblsp dhana
¼ cup sour cream
1 tsp green chilles
Salt to taste
Peel and mash avacado
Add rest of ingrediets, mix well and serve chilled.
Grilled mochachos chicken
6 pieces chicken fillet (butterflied)
1 ½ tsp garlic
2 tsp coarse red chillies
1 tsp fine red chillies
2 tsp bbq spice
½ tsp white pepper
2 tblsp lemon juice
2 tblsp vinegar
2 tblsp mayonnaise
3 to 4 tblsp Mochachos spice( whichever flavour you prefer)
2 tblsp ghee
Salt to taste
Marinate chicken with spices for an hour, cook in a pot until almost done, place fillets in a pyrex dish,in the same pot with remaining sauce add 2 tbl mochachos spice with little oil or ghee and put on stove to burn out excess water, drizzle sauce over fillet and grill in oven, perfect for burgers or as a meal served with savoury rice and chips.
Basic tortilla dough
1 ¼ cup flour
¾ cup corn flour/maziena
1 tsp salt
1 tsp baking powder
4 tblsp butter
½ cup water
Combine the dry ingredients together. Rub the butter until mixture resembles breadcrumbs. Make a soft dough with water
Cover and let it rest for an hour. Roll out thin dinner plate size roties and cook on non stick pan.
