Mince must be washed and drained
1 level dessertspoon rough salt or as required
1 level dessertspoon red masala
½ cup oil
2 ½ level dessertspoons crushed green chillies or as required
1 level dessertspoon crushed garlic
2 heaped dessertspoons fine dhania
1 ½ dessertspoons fine jeero
3 medium onions – sliced or chopped
Juice of 2 lemons
2 cups greens – dhania and spring onions chopped
METHOD
To mince add rough salt and red ginger garlic masala.
Allow mince to cook on medium heat until most of the water has evaporated.
Mash mince to remove lumps
Add oil, chillies garlic, dhania , jeero and lemon juice.
Braise mince with oil and cook until completely dry.
Allow to cool. Add onions. Add greens.
Mince is now ready to fill
NB DO NOT COOK MINCE AFTER ONIONS ARE ADDED
