2kg Mutton cut and washed
Steam 2 onions and 4 tomatoes
Marinate mutton overnigt or for a few hours with:
3 tsp ginger garlic masala
3 tsp salt..1 ½ tsp first, then add 1 tsp after, then add ½ tsp before serving
4 tsp red chillies
2 full tsp dhana jeeru
1 tsp red masala
1 tsp arad/turmeric
Make a vagaar with 1 onion, ghee pinch of soomph until golden brown. Add mutton and cook for 20 minutes. Then add in steamed onion and tomatoes. Add in some potatoes. Add in 3 cups boiling water. Reduce heat and let simmer. Add in balance of salt and some green chillies.
