1/4 cup olive oil
6 Tagliatelle Nest
6 cloves garlic peeled and thinly sliced
1 bottle pasta sauce (basil and olive oil)
10 cherry tomatoes cut in half
1 medium thinly sliced red onion
2 handfuls fresh spinach (baby or normal)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon ground green chilli or to taste
1 teaspoon ground black pepper
Lemon zest from one lemon
Salt to taste
3 cups hot water dissolve one chicken stock cube and one tomato stock cube
250 ml fresh cream (optional)
I used fresh herbs if you don’t have use dried herbs
Add the tagliatelle nests,cherry tomatoes, red onion, spinach, and garlic to a flat bottom pot. Sprinkle in the oregano, basil, parsley,green chili,salt, pepper, and lemon zest. Spread the tomato paste evenly over the top, then drizzle in the olive oil and pour in the stock.Turn on the heat to medium. Bring to a gentle simmer,cover, and cook for 10 minutes,stirring occasionally so the pasta separates and cooks evenly and the tomato paste melts into the sauce. Once the pasta is tender and the sauce has thickened, give everything a final mix. Serve topped with fresh basil, grated cheese of your choice. You can add grilled chicken of steak to the pasta or serve it as a side.
