Peaches and Cream (26.03.09)

 
4 Peaches/  caned fruit
1 tsp Vanilla essence
1 tub Fresh cream
½ cup thickened yoghurt
8 – 10 tsp castor sugar

 Wash , peel and halve the peaches. Remove the stones. Place the peach halves in a pan with 1 cup water and bring to a boil. Lower heat and simmer for 5 minutes or just until tender. Stir in the vanilla essence. Add the castor sugar and swirl the contents of the pan to dissolve it. Making sure the peaches do not break. Alternatively, remove some of the syrup and dissolve the castor sugar in it and return to the pan: mix gently. Serve the peach halves with a dollop of low fat cream or thickened yoghurt. Sprinkle with crushed biscuit crumbs.
