Ingredients
Dough……3 cups flour, 250 gram butter, pinch of salt n 250 ml of sour cream
Chicken filling.
1kg chickens cubed add turmeric, salt, ground jeeru and ground garlic and cook till done.
In the mean time braise 1tablespoon butter,1 tablespoon flour add in ½ cup milk and ¼ cup steers garlic sauce,red chillies,fine white pepper.
Lastly add Nando Wild herbs sauce n Nandos Peri Peri sauce.
Add sauce to chicken n 1 cup grated cheese.
Roll out dough like round small purees fold like triangles n paste with egg.
Sprinkle till and rough red chillies n parsley and then bake @ 180 degrees.
SMALL ROTIE SAVOURY
½ kg chicken fillet cubed
Cook in the following:
1 tsp ginger garlic masala
¼ cup tomato sauce
Pinch saffron
Salt
1 tsp rough red chillies
1 tsp green masala
1tsp lemon juice
Pinch haldi (Arad)
Cook in little ghee and shred the meat.
Add green dhania
Make ordinary roti balls….I TAKE 1 CUP FLOUR, SALT, and 1TBLSPN GHEE N BOILING WATER
U can make little balls, roll n fry on tawa or roll out dough, smear ghee n roll into a swiss roll. Cut finger size. Roll n fry on tawa.
For 2cups of fillet I make 2 ¼ cups of roti dough.
On each lower roti smear a mixture of Mrs. Ball’s chutney n Steers peri peri sauce.
Then put chicken filling
Smear little green chutney on top of filling.
Then layer with grated cheese n close with roti.
Ready to freeze.
Fry on tawa till crispy. Serve hot
BHAJIE LAGAN
1 big bunch bhajee
½ cup cake flour
½ cup chana flour
½ cup mielie meal
2 tsp b.powder
1 tsp Salt
5 eggs
2 onions grated
1 Cup milk
1 tblsp ghee
½ cup oil
Green chillies
1 tin sweet corn
Chopped green dhania
¼ tsp Arad
1 tsp dhana Jeero
Mix together. Allow to stand for 1 hour. Place in Pyrex. Put 1 beaten egg on top. Sprinkle colour tal. Bake 1 hour. Allow to stand before cutting
POLONY PURIE RECIPE
2 cups water
2 tablespoon butter
1/4 teaspoon salt
2 cups flour
Place water, butter and salt in a pot and boil…add flour and stir vigorously until it forms a ball…remove from heat knead into smooth dough…
1 roll polony sliced
Cheese slices
Chutney of choice
3 potatoes boiled and mashed with little butter and milk, salt and pepper
2 beaten eggs
Breadcrumbs
Roll out dough thinly on a floured surface…use a flower or circle cutter bigger then the polony size…cut out rounds, lay rounds on a tray…spread mash on top…put polony slice,piece of cheese and drop of chutney..Cover with top…press sides down with fork to seal…Dip in beaten egg and breadcrumbs…freezer suitable…fry in deep hot oil
