Ingredients
500g Butternut
500g Pumpkin
2 Red Peppers
2 Yellow Peppers
1 block Danish Feta
1 bud Garlic
For Roasting
Drizzle of Olive Oil
Sprinkle of Vegetable Spice, Salt & Pepper
Roast
Place butternut, pumpkin, red pepper, yellow peppers, whole garlic bud and feta o a baking tray. Drizzle with olive oil and sprinkle with vegetable spice, salt & pepper. Roast in the oven until well roasted and tender.
Liquidize
Transfer roasted veggies to a blender. Add sun dried tomatoes. Blend until smooth and creamy
Make Vagaar
In a pot, heat some oil. Add chopped onions and saute until soft. Add green masala, salt & pepper. Saute well.
Combine
Add the liquidized roasted veggies to the vagar. Stir well and let it simmer. Add a dash of lemon.
Finish
Add chopped danya (coriander) and fresh cream. Stir and simmer for a few minutes. Serve hot and enjoy!
