Ingredients
* 500 g dark cooking chocolate → about 3 cups chopped chocolate (or chocolate chips)
* 30 g vegetable oil → 2 tablespoons + 1 teaspoon oil
* 250 g marshmallows → about 5 cups mini marshmallows (or roughly chopped large ones)
* 220 g Cadbury Fry’s Turkish Delight bars → 4 x 55 g bars, chopped (about 1½ cups pieces)
* 60 g salted pistachios → about ½ cup pistachios
* 22 g shredded coconut → about ¼ cup shredded coconut
Method
1. Line a 22 cm / 9-inch square tin with baking paper, leaving extra paper over the sides for easy lifting.
2. Melt 3 cups chocolate with 2 tbsp + 1 tsp oil over a double boiler or microwave in short bursts until smooth.
3. Allow chocolate to cool for about 20 minutes so it doesn’t melt the marshmallows.
4. Stir in:
* 5 cups marshmallows
* 1½ cups chopped Turkish Delight
* ½ cup pistachios
* ¼ cup coconut
5. Mix until everything is well coated.
6. Press into the tin and refrigerate for 2 hours until firm.
7. Leave out for 20–30 minutes before slicing for cleaner cuts.
Tip: For a more luxurious rocky road, add ½ cup roasted almonds or crushed biscuits to balance the sweetness. 🙂
