Breakfast Omelette
4 eggs beaten, to this add salt, pepper, crushed garlic, crushed green chillies.
Filling:
Onions (chopped)
Tomatoes (chopped)
Mushrooms (sliced)
Grated cheese
Heat a non stick frying pan, put ghee in a pan, pour egg mixture and leave for a few seconds so the egg begins to set. Once its set turn over and add onion, tomato, mushroom and cheese, fold in half and serve.
Methi Bhaji and Eggs
2 bunches methi bhaji
1 onion chopped
1 tomato chopped
1 tsp salt
Pinch of arad
1 tsp dry dhana
2 tsp green masala
4 eggs
Make vagaar with onion and jeeru, when done, braise masala and spices, add bhaji which has been washed and chopped, then add chopped tomatoes and cook till nicely done. Add egg and scramble with bhaji, cut green dhana, spring onions and serve with hot rotis
Onion and Tomato Eggs
Braise 1 onion (chopped) with ghee and jeeru, add a sliced green chilli and about 3 cloves garlic to this, once braised add 1 chopped tomato, cook till tomato is done then add 4 whole eggs to this, season with salt and pepper, cover with a lid and leave eggs to cook. Once cooked sprinkle with greens.
Option 1: mushrooms or asparagus can be added when making vagaar.
Option 2: tomato mixture can be used for scrambling eggs.
Scotch Eggs
6 eggs boiled and shelled
Cake flour
2 cups chicken or mutton mince
1/4 cup breadcrumbs
2 tsp salt
1 tsp black pepper
1 tsp ground dhana
1 tsp ground jeeru
1 tblsp crushed garlic
Green chillies to taste
1 tblsp ground almonds
1 tblsp cake flour
1 tblsp lemon juice
1 tblsp freshly chopped dhana
Beaten egg
Breadcrumbs
Combine all ingredients together in a dish, mix well.
Toss eggs in flour, shake off excess flour, divide mixture into 6 portions, shape each portion of mince mixture around each egg using lightly floured hands. Dip in beaten eggs and crumbs, deep fry eggs in hot oil until well browned, drain on absorbent paper, cut eggs in half and serve.
