STEP 1
Stir fry prawns: in a pot add 1 tblsp olive oil and quickly par – cook prawns in ¼ tsp salt, ½ tsp lemon juice and ¼ tsp of garlic powder. Cook for 5 minutes. Remove from pot
Step 2
Make sauce: in the same pot, add the following:..
1 tblsp olive oil
1 tsp diced ginger
1 tbblps Thai Red Curry Paste
1 tblsp soy sauce
½ diced white onion
1 tsp diced garlic
½ cup water
1 tblsp lemon juice
1 tsp sugar
1 tsp salt
1 tin coconut milk
Pinch of turmeric
Small handful of cherry tomatoes
Garnish: 1 tblsp torn basil and chopped coriander/dhania
Method
Saute onion in olive oil until translucent. Add ginger, garlic and fry for a minute. Thereafter add curry paste and fry for another minute. Add water, soy sauce, lemon juice, sugar, salt, coconut milk, turmeric/arad, cherry tomatoes. Keep the herbs aside. Add just before serving
