This is a wonderful, easy, delicious recipe that can help you to avoid meat dishes.
It is from Morocco, and the name is because, it is what you cook, when you haven’t got chicken (it flew away!).
1 1/2 cups of boiled chickpeas
1 cup water
1 large sweet potato in bite size chunks
1 medium onion, thinly sliced,
1 tbsp olive oil
a little salt
Cook gently 10 minutes, or until the sweet potato is cooked, and the water has evaporated to form a sauce.
Add more salt if required, pepper, and 2 tbsp finely chopped coriander or parsley leaves.
