Ingredients
– 1½ pounds cherries (about 6 cups), pitted and divided
– 1 cup sugar
– ¾ cup lime juice
– 2 tsp finely grated lime zest
– 6 cups sparkling water
– 1 lime, cut into wedges
– 1½ cups water
– Ice, for serving
Method
1. Add 1 pound of the cherries, sugar and 1½ cups water to a medium pot.
2. Cover and simmer over medium heat for approximately 20 minutes, until the cherries are very soft and a fragrant syrup forms.
3. Remove from the heat and allow to cool.
4. Blend the cherry mixture with the lime juice and lime zest until smooth. This is your cherry-lime syrup.
5. To serve, pour approximately ½ cup of syrup into a tall glass over ice.
6. Add ¾ cup sparkling water and stir gently.
7. Garnish with the remaining cherries and a lime wedge.
*Tip:* Adjust the amount of syrup and sparkling water to suit your preferred sweetness.
