BRAINS Remove brains from sheep head, boil with salt
& arad for 10 minutes. Cut into big pieces.
Braise onions in ghee with green chillies,
Add ground dhana & chillie powder with brains.

KALEJI (LIVER)
Slice kaleji, pepsu, heart & kidney in 4cm fingerslices. Soak in water with juice of 1 lemon for 10 minutes.
Drain. Prepare following masala & marinate.
1 tablespoon each of ginger, garlic, ground red chillies, 1 teaspoon ground cumin,
½ teaspoon turmeric, 1½ teaspoons salt, juice of 1 lemon.
Cook in ghee, sprinkle ½ teaspoon cumin or Dip in flour [or rice flour] Fry if desired.

1 whole liver, cut into thin slices, soaked in milk and drained Salt to taste White pepper Black pepper Green Masala Good Blob of butter Chopped onions optional
