3 slices chicken fillets cubed
Peppers cubed
Purple onion
1 Tblsp red masala (ginger garlic paste)
Half tsp green masala
Squeeze of lemon
2 tsp red chilli powder
Pinch of turmeric
Half tsp ground jeeru
1/4 tsp lemon pepper
1/4 tsp cajun spice
2 Tblsp oil
Method
Marinate your chicken in the above . Adjust spices according to preference
Skewer alternating with peppers/onions
Cook in a flat pot with a slice of butter .Do not dry out
Once chicken is almost cooked transfer to a frying pan and chargrill.
Place back in the pot and simmer. Place a hot piece of charcoal in a foil or steel container with a few T of butter or oil . Close the pot.. for a few minutes till the smoke has stopped.
Basting sauce
Half cup Steers peri peri sauce
2 Tblsp Nandos mild or lemon and herb
2 Tblsp sweet chilli sauce
Once the skewers have cooked baste with the above sauce.
