Ingredients
200g haloumi cheese
12 baby tomatoes
12 pitted Kalamata olives
1 tbslp zaatar
1 tblsp oil
¼ tsp crushed black pepper
1 tsp lemon juice
Salt to taste
Baby spinach leaves
Method
Cut haloumi cheese into 4 pieces length wise
Place zaatar, oil pepper lemon juice and salt in bowl
Add haloumi cheese to marinade
Heat frying pan
Season tomatoes. Fry for about 5 – 10 minutes on medium heat.
Remove from pan
Fry haloumi in same pan till golden on all sides.
Cut into 3 pieces
Pierce baby tomatoes haloumi and olives onto skewer
Place on a bed of spinach leaves
