500g chicken fillet cut into strips
1 tblsp Dijon mustard
2 tblsp soft honey
1 tblsp crushed garlic
A fresh grind of black pepper
1/2 tsp red chilli powder
3 heaped tblsp thick plain yogurt
Salt as required
Marinate chicken strips in all ingredients (except breadcrumbs) for a few hours.
Dip in breadcrumbs
(allow to stand for 1/2 an hour for optimal results.)
Fry in hot shallow oil until done.
To ensure a moist chicken, do not overfry.
Serve with perinaise, mayonnaise or honey&mustard sauce.
(a mix of mustard sauce and mayo is really good too)
