Khicro recipe – mixed cereal broth (30.10.14)

Ingredients:

500g soup bones(do not cut off the meat from bones as this is a broth and not a soup)
2 pieces tuj
A few elachi peppers and cloves
2 cups of mixed cereal(which we have made up in this way)
3/4 cup wheat
1/4 cup rice
2 tbl spoons oil dhal
2 tbl spoons barley
2 tbl spoons chana dhal
1 tsp salt
1 medium sized onion
1/4 cup dhania
2 tsp salt(coarse)
1 tsp arad
1 tsp chillies
1 tsp dhunia jheeru powder
2 tsp ginger garlic
1 tsp whole jheeru
4 or 5 green chillies pounded up
1 tsp garam masala
Boil the cereals/dhals  in sufficient salt water until thoroughly cooked.Grind through mincer with the liquid. Do not drain off any excess water.

Method:
Slice onion and fry in ghee with jheeru until golden brown. Add the bones with the masala’s except garam masala’s and the pounded green chillies till bones are well coated with them. Fill the pot with water and cook over medium heat till meat on bone is tender. Grind the cereal and add to pot. Stir thoroughly and mix well. Let cook for atleast 40 minutes til broth is thick. Fry a few slices of onion in a little ghee and pour over broth. Stir in the garam masala and garnish with the cut greens a little before serving. Serve with chutney and lemon.
