2kg roast leg (make slits and fork)
1 1/4 Tbsp corse salt
2 Tbsp white vinegar
1 Tbsp Garlic
Marinate:
Masala Ingredients
1 Tbsp ginger garlic red masala
1 Tbsp fres grounded very red chillies
1/2 tsp arad
1/2 tsp white pepper
1/2 tsp fine mustard
1 Tbsp chicken spice
1 Tbsp worcester Sauce
1 tsp tubasco
juice of 1/2 lemon
4 Tbsp melted butter
2 Tbsp tomato puree
1/4 tsp bicarb
Method:
make a paste. Apply on roast and marinate overnight or a few hours. cook in roasting pan. keep lid thighly closed for 2 or more hours until brown. open lid and brown. cover roast with foil. Pre-heat OVEN TO 180 Degrees. Allow to cook for 2 hours. turn oven to grill and bake until red. Pour left over sauce over roast.
