Mutton Special Curry

Ingredients
1kg Lamb Meat – cubed
1 tsp ginger garlic
1 tsp chillie garlic paste
3 tsps red chillies
1 tblsp crushed jeeru
1 tsp salt
½ tsp pepper
1 tuj
2 elachi
3 whole pepper corns
¾ kg tomatoes – chopped
½ cup white vinegar
½ cup water
¼ cup tomato puree
1 cup onions – sliced & fried

Vagaar:
2 tblsps ghee
6 baby onions
6 green chillies- slit
1 tblsp garlic – sliced
10 halved almonds

Method  

  1. Marinate meat with spices and cook until tender.
  2. Mix the tomatoes with the vinegar and water. Cook until tomatoes are thick and mushy.
  3. Liquidize the tomato puree, cooked tomato mixture and fried onions.
  4. Add to cooked meat and simmer until sauce is thick.
  5. Fry baby onions, chillies, garlic and almonds in ghee.
  6. Pour over meat and serve with naan.
