CHICKEN SCHNITZEL RECIPE
6 chicken breasts butter flied
1 tblsp green masala
1 tsp chicken spice
1 tsp lemon pepper
1 tsp red chillies
1 tsp salt
1 small tin nestle cream
Marinate fillet in above mixture, if possible marinate overnight. Dip in breadcrumbs and fry in med hot oil till cooked through.
(I grilled my schnitzels with little olive oil sprinkled on them)
Mushroom sauce
1 punnet mushrooms (sliced)
1 tsp black pepper
Salt
Butter
250ml cream
Melt butter, add mushrooms, salt, pepper and leave to cook till water burns out, add fresh cream and cook till sauce thicken.
Layer fried chicken in platter, top with mushroom sauce and place sliced cheese on top, pop under grill so cheese melts
MEXICAN CRUMB CHOPS
FOR THIS RECIPE…ANY TYPE OF CHOPS CAN BE USED..
ALSO AMOUNTS OF SPICES CAN BE JUDGED BY YOURSELF..
Marinate with red masala lemon juice salt Dry dhana jeero arad little oil n red chillies n cook till done
Cool
Dip in beaten egg
Crumbs:
One big pkt simba Mexican chillie crisp crushed fine added in some till n corn flake crumbs.
Roll in crumbs
Deep fry
Serve with chips n salads.. Enjoy
CRUMB MUSHROOMS
1 punnet mushrooms washed. Dip each mushroom in cake flour and leave aside.
2 eggs beaten
¾ cup breadcrumbs: to the breadcrumbs add
¼ tsp salt
¼ tsp chicken spice
¼ tsp chillie powder.
Combine the breadcrumbs with the above spices. Dip mushrooms in beaten eggs and dip in breadcrumbs and fry in hot oil until golden brown.
DIP:
Mix together ½ cup each of steers garlic sauce and plain yoghurt
CRUMBED CHICKEN FILLET
1kg chicken fillet cut into strips
Marinade in the following ingredients:
Crushed jeeroo
Mustard powder
Lemon pepper
Chicken spice
Green garlic masala
2 to 3 tblsp milk
Mix in 1 egg for 1 kg chicken fillet
Dust in 1/2 cup self raising flour
1 cup bread crumbs
And 2 tblsp chicken spice. Fry and njoy
FISH CAKES
500g fish fillets
Potatoes boiled and mashed
Finely chopped fresh red chillies
1 teaspoon salt
Finely chopped fresh coriander
Dry breadcrumbs
Lemon juice to taste
METHOD
Steam fillets with salt garlic paste. When cool flake the fillets. Mix in mashed potatoes chillies salt lemon juice and fresh coriander. Form into size balls flatten little dip in egg beaten then in crumbs. Shallow fry
