2 ½ Kg fatty leg mutton
1 Tbsp coriander seeds
½ Tbsp black pepper corns
½ Tbsp crushed garlic
2 cup dried bread crumbs
2 Tbsp lemon juice or vinegar
4-5 tsp salt
1 Tbsp cumin seeds
1 ½ Tbsp green pounded chillie
1 ½ tsp red chillie powder
1 Tbsp dried crushed mint
Wash and grind mutton twice. More fat from sheeps tail may have to be added if meat is to lean. Squeeze out all moisture.
Roast cumin, peppercorns and coriander on tawa and when strong smell arises, crush them fine and add to mince.
Add all ingredients and mix well. Fill in sausage casings.
