2 red chilies, chipped
4 cloves of garlic.
1/2 Tsp paparika
1/2 Tsp ground cumin
1/4 cup olive oil
1kg beef fillets
Salt and pepper milled.
Combine chilies, garlic and olive oil to create a thin paste.
Coat the beef with the thin paste and marinate for 20 min, the longer the better..
Heat a griddle pan over high heat, grill the fillets for 3-4 minutes turning regular do not over cook.
Remove from heat and allow it to rest before serving.
Salsa
2 small Ripe papaya
Peeled and diced.
2cm knob ginger grated
1 red Chilli deseeded and chopped.
1/2 cucumber diced.
1 Tsp Sugar
1 tsp salt
1/2 punnet if mint and coriander, chopped.
Serve fillets sliced with naan and papaya Salsa.
