Ingredients
1 small red onion cut into 8 wedges
½ tsp chilli flakes
2 tblsp olive oil
6 -8 baby tomatoes halved
1 tso dried origanum
¼ cup Kalamata olives
1 cup cheddar cheese grated
¼ cup jalapenos sliced
120g nacho chips
Fresh or dried origanum for sprinkling
Method
Preheat oven to 190 degress
Toss together onion,chilli flakes and olive oil.
Bake for about 8 to 10 minutes. Add tomato and cook for further 10 minutes
Remove from oven. Keep aside
Layer nacho chips in an oven proof bowl
Top with cheese and rest of ingredients.
Place back in the oven to melt cheese
Sprinkle over fresh/dried origanum
