Sweet corn and sausage casserole (21.12.2010)


 

1 onion chopped

1 green pepper diced

2 Tbsp butter or oil

500g Vienna sausages

3 Tbsp butter

2 Tbsp flour

1 cup milk

Salt/pepper to taste

½ can cream style sweet corn

½ cup cheddar cheese grated

1 tomato

 

Method:

 

Preheat oven to 180C. Grease a casserole dish with butter. Saute the onion and green pepper until just tender. Add sausages and fry until browned. Slice and place in the preheated dish. Melt the butter and add the flour, stir until smooth. Gradually add the milk while stirring continuously, heat until the mixture comes to the boil and thickens. Stir continuously. Season with the salt and pepper, add the sweetcorn and mix. Pour over the sausage mixture in the dish and sprinkle the cheese on top. Arrange the tomato slices on top and bake for 25 minutes or until warmed through.
