SALT AND PEPPER CHOPS
1 kg chops
1 tsp salt
½ tsp white pepper
½ tsp lemon pepper
4 to 5 tblsp vinegar
1 tblsp garlic flakes
1 tblspl steak and chops spice
3 tblsp worster sauce
5 tbspl oil or olive oil
Marinate together and braai over hot coals
MASALA CHICKEN FOR BRAAI
3 baby chickens (cut in half)
2 kg chicken fillets
5 tblsp chilli garlic masala
Salt to taste
1 tblsp tandoori masala
5 tblsp lemon juice
1 tblsp red chillies (optional)
2 tbsp dry dhana
4 tblsp thick yoghurt
5 tblsp oil
Marinate chicken in above and braai over hot coals
T-BONE STEAK
1 kg T-bone steak
1 tblsp chilli garlic paste
1 tsp salt
1 tsp lemon pepper
½ cup vinegar
1 tblsp garlic flakes
3 tblsp chilli sauce
1 tbl dry dhana
¼ cup oil
Marinate steak with above, leave to marinate for a while before braaing.
FISH PARCELS
1 kg hake or any firm fish
2 tblsp garlic sauce
½ cup mayonnaise
1 tsp salt
1 tsp fish spice
1 tsp green masala
3 tblsp lemon juice
1 tsp lemon pepper
5 tblsp olive oil
Fresh chopped parsley
Marinate fish with above ingredients, put on pieces of foil, top with sliced tomato, green pepper and onion rings, season with salt and pepper, put a blob of butter.
Close tightly and braai over hot coals. Serve with baked potatoes, rice or green salad.
PRAWNS ON SKEWERS
1 kg prawns
½ cup lemon juice
¼ cup seafood dressing
5 tblsp chilli garlic masala
1 tblsp red chillies
5 tblsp olive oil
Salt to taste
Marinate prawns in above. Skewer on sticks with peppers and onions. Braai over hot coals, prawns wil be ready when shells turn pink. Serve and enjoy.
